It's Friday! The countdown to the next 30-day Paleo (pronounced "pay-lee-oh") Challenge (12 days!) has begun. We start on Wednesday, August 1 and finish up on Thursday, August 30. In preparation, maybe you've already started looking through your kitchen and pantry for all those non-Paleo items and started thinking about what IS Paleo. If this is your first time with Paleo, then here is some info on what Jacob and I have on hand in our house. Once you have Paleo-friendly food stuffs in your kitchen, maybe you want to start experimenting with some great recipes.
In the end, Paleo is all about cooking and eating really yummy, flavorful REAL FOODS that don't come from a box or a restaurant. Drop "Paleo" from the conversation and what you have is meals that use nutrient-dense ingredients flavored with spices. This is all a tool to get you focused on eating foods that don't need nutritional labels -- foods that all hail from the perimeter of the grocery store (or better yet, your garden or local farmer's market) -- and are perishable. To be successful with this challenge (and after the challenge), planning ahead is KEY. Use this pre-Challenge time to plan your success because a free month of Unlimited CrossFit is up for grabs!
